Main Ingredients

  • 1 bowl of warm cooked rice
  • 1 handful of well-fermented napa cabbage kimchi (about 1 cup, finely chopped)
  • 45g fresh flying fish roe (Tobiko/Masago)
  • 1/2 medium onion (finely diced)
  • 1 Tbsp sesame oil
  • 1 Tbsp cooking oil
  • A pinch of salt (to taste)
  • 3 Tbsp Cheongju (rice wine/mirin) (to remove fishy odor from roe)

Cooking Instructions

First, to remove any potential fishy odor and soften the flying fish roe, soak it in 3 Tbsp of Cheongju (rice wine or mirin) for about 10 minutes. This step enhances the roe’s flavor and texture.

Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the finely diced onion and sauté for about 2-3 minutes until it becomes translucent. Sautéing the onions well brings out their natural sweetness, enriching the flavor of the fried rice.

Once the onions are somewhat cooked, add the finely chopped kimchi. Stir-fry for about 3-4 minutes until the kimchi softens and becomes fragrant. It’s important to cook off excess moisture from the kimchi to prevent the fried rice from becoming mushy.

When the kimchi is nicely stir-fried, add 1 bowl of warm cooked rice. Use a spatula to break up any clumps of rice and stir-fry everything together evenly with the kimchi and onions. Ensure each grain of rice is coated for the best texture.

Now it’s time to add the delicious flying fish roe! Set aside a small portion of the roe (about 1/3) for garnish. Add the remaining soaked roe to the pan and gently stir-fry with the rice for 1-2 minutes. Be careful not to overcook the roe, as it can become tough.
