Ingredients
- 1 packet of Anseongtangmyeon noodles
- 1/2 packet of fresh oysters (or about 100-150g)
- A pinch of gochugaru (Korean chili powder) (adjust to taste)
- A pinch of black pepper
- 600ml of water (50ml more than the noodle packet instructions)
Cooking Instructions
Step 1
Noodle Choice Tip: Gang Ho-dong recommended Anseongtangmyeon among various ramens, stating it complements other ingredients well and creates a fantastic pairing with oysters. The unique savory flavor of Anseongtangmyeon will further enhance the oyster’s taste.
Step 2
Preparing the Oysters: It’s crucial to wash fresh oysters thoroughly under running water. If there are any oyster shells or impurities, place the oysters in a bowl with water and a bit of coarse salt. Gently stir with a spoon to rinse, then carefully rinse under running water again, being cautious not to break their shape.
Step 3
Boiling the Water: Since oysters add richness to the broth, measure and pour 600ml of water into the pot, which is slightly more than the amount indicated on the ramen packet (usually 550ml). Boiling with ample water will allow the refreshing flavor of the oysters to fully infuse the broth.
Step 4
Adding Seasoning and Noodles: Once the water is boiling vigorously, add the Anseongtangmyeon soup base and stir well. Then, add the noodles and cook according to the packet instructions. Keep an eye on them to prevent overcooking.
Step 5
When to Add Oysters: When the noodles are almost fully cooked, carefully add the prepared oysters to the pot. Overcooking oysters can make them tough, so it’s important to manage the cooking time with the noodles.
Step 6
Adding More Seasoning: After adding the oysters, sprinkle in a pinch of black pepper and a bit of gochugaru according to your preference. This adds a pleasant spiciness and aroma, making the broth even richer.
Step 7
Finishing Touches & Enjoying: Following Gang Ho-dong’s method, once the oysters plump up by absorbing the broth (for about 8-10 seconds), turn off the heat immediately and cover the pot. While it steams, the oyster’s umami and the ramen broth will meld together, creating a deeper, more refreshing taste. Enjoy it while it’s hot!
