Main Ingredients
  • 2 cups rice
  • 200g minced beef
  • 1 cup dried Chwinamul (Korean aster)
  • 1 cup dried eggplant
  • 1 cup dried shiitake mushrooms
  • 0.5 cup minced radish
  • 1 cup blanched broccoli florets

Cooking Instructions

Step 1

First, soak the dried vegetables (mushrooms, eggplant, Chwinamul) in lukewarm water until softened before cooking. Once rehydrated, finely chop or cut them into bite-sized pieces suitable for your baby. (The perilla oil, though not pictured, should also be prepared at this stage.)

Step 2

Heat 1 tablespoon of perilla oil in a pressure cooker over medium heat. Add the soaked Chwinamul and 1 tablespoon of Doenjang. Sauté for about 1 minute. This step helps to enhance the Chwinamul’s aroma and flavor.

Step 3

Next, add the dried eggplant that has been soaked in water. Continue to sauté over medium heat for another minute until the eggplant begins to soften and absorb the flavors.

Step 4

Add the 200g of minced beef, ensuring any excess blood has been drained. Stir-fry over medium heat until the beef changes color. Break up any clumps of beef and ensure it’s evenly cooked.

Step 5

This is where ‘Momma Making Dad’ pours in love! Stir with care and affection. (While not a direct cooking step, it adds to the joy of preparing this meal!)

Step 6

Add the 2 cups of washed rice to the pressure cooker. Gently add the rice to avoid breaking the grains.

Step 7

Incorporate the 0.5 cup of minced radish, 1 tablespoon of dried kelp powder, and the rehydrated, chopped dried shiitake mushrooms. These ingredients add a variety of textures and nutrients.

Step 8

Now, it’s time to add water. Use twice the amount of water as rice. For 2 cups of rice, add 4 cups of water. (Note: Water amount may vary slightly depending on the pressure cooker model and ingredients.)

Step 9

Gently stir all the ingredients with a spatula to combine them well. Drizzle in the remaining 1 tablespoon of perilla oil, then close the lid of the pressure cooker securely.

Step 10

Cook the rice as you normally would in a pressure cooker. Using a pressure cooker will help the ingredients become more tender.

Step 11

To preserve the nutrients in the blanched broccoli, it’s best to add it after the rice is cooked and has cooled slightly. Overcooking can lead to the loss of vitamins and other beneficial compounds.

Step 12

Voilà! Your delicious Beef and Chwinamul Toddler Meal is ready. Your baby will surely be excited!^^

Step 13

Once the rice has cooled down a bit, gently fold in the blanched broccoli florets and mix them into the rice. The vibrant green of the broccoli adds a visually appealing touch.

Step 14

After the meal has completely cooled, portion it into baby food containers or small bowls. Refrigerate and consume within 2-3 days, or freeze for longer storage. Reheat gently in a microwave or on the stovetop before serving.

Step 15

This concludes the super simple toddler meal recipe from ‘Momma Making Dad’, thoughtfully created with your baby’s health and nutrition in mind. Treat your little one to a nutritious and delightful meal!
