Pancake Ingredients

  • 160g fresh oysters
  • 20g all-purpose flour
  • 0.5 tsp beef bouillon powder
  • 2 fresh eggs
  • 2 handfuls chopped green onions (approx. 20g)
  • 2 Tbsp cooking oil
  • Pinch of black pepper
  • 1 Tbsp flour (for washing oysters)

First, it’s crucial to thoroughly clean the oysters. Place 160g of oysters in a bowl and add 1 Tbsp of flour. Gently toss them to coat. The flour helps absorb any mucus and impurities, allowing for a cleaner wash. After coating, rinse them gently under running water.

Drain the washed oysters in a colander, then use paper towels to pat them as dry as possible. Excess moisture in the oysters can make the pancake soggy, so this step is important.

Now, let’s make the pancake batter. In a large bowl, crack 2 fresh eggs. Add 0.5 tsp of beef bouillon powder, 2 handfuls of chopped green onions, 20g of all-purpose flour, and a pinch of black pepper. (Tip: If you enjoy a spicy kick, finely mince half a chili pepper and add it for a zesty flavor!)

Whisk all the ingredients together gently with chopsticks or a whisk until well combined. Ensure there are no lumps of flour and that everything is evenly incorporated.
