Nutritious Rice Cooker Oyster Pancake
Super Easy Rice Cooker Oyster Pancake Recipe
Make a delicious oyster pancake with fresh oysters, known for their revitalizing properties! Using a rice cooker makes it easy to achieve a moist and tender pancake without much oil. It’s a satisfying meal or a perfect accompaniment to drinks.
Pancake Ingredients
- 160g fresh oysters
- 20g all-purpose flour
- 0.5 tsp beef bouillon powder
- 2 fresh eggs
- 2 handfuls chopped green onions (approx. 20g)
- 2 Tbsp cooking oil
- Pinch of black pepper
- 1 Tbsp flour (for washing oysters)
Cooking Instructions
Step 1
First, it’s crucial to thoroughly clean the oysters. Place 160g of oysters in a bowl and add 1 Tbsp of flour. Gently toss them to coat. The flour helps absorb any mucus and impurities, allowing for a cleaner wash. After coating, rinse them gently under running water.
Step 2
Drain the washed oysters in a colander, then use paper towels to pat them as dry as possible. Excess moisture in the oysters can make the pancake soggy, so this step is important.
Step 3
Now, let’s make the pancake batter. In a large bowl, crack 2 fresh eggs. Add 0.5 tsp of beef bouillon powder, 2 handfuls of chopped green onions, 20g of all-purpose flour, and a pinch of black pepper. (Tip: If you enjoy a spicy kick, finely mince half a chili pepper and add it for a zesty flavor!)
Step 4
Whisk all the ingredients together gently with chopsticks or a whisk until well combined. Ensure there are no lumps of flour and that everything is evenly incorporated.
Step 5
Pour 2 Tbsp of cooking oil evenly into the bottom of your rice cooker pot. Lightly greasing the pot prevents the pancake from sticking and helps it cook to a nice golden brown.
Step 6
Pour the prepared oyster batter into the rice cooker pot and spread it evenly. Close the lid and select the ‘Reheat’ or ‘Nutrition Steam’ cooking mode, then cook for 9 minutes. (The name of the cooking mode may vary depending on your rice cooker model.)
Step 7
After the first cooking cycle, carefully open the lid and use a spatula to gently flip the pancake. Close the lid again and cook for another 9 minutes using the ‘Reheat’ or ‘Nutrition Steam’ mode. This double cooking ensures the pancake is cooked through and has a crispier exterior.
Step 8
Once cooking is complete, carefully remove the inner pot from the rice cooker and transfer the pancake to a serving plate. For an appealing presentation, you can garnish it with a few slices of red chili pepper. Enjoy your delicious oyster pancake!
