A delightful fried rice featuring tender chicken and fragrant shiitake mushrooms, loved by both children and adults. It’s a wonderful meal for special occasions or busy days, and the seasoning is kept mild for babies transitioning to solid foods.
Main Ingredients- 2 bowls cooked rice
- 120g chicken tenderloin
- 2 fresh shiitake mushrooms
- 2 Tbsp chicken stock

- 1 Tbsp minced green onion
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
First, carefully remove any thin membranes or tough tendons from the chicken tenderloin that might hinder the eating experience. Cut the chicken into small, bite-sized pieces, about 1cm in size, making it easy for children to eat. Pieces that are too large can be difficult to chew.
Step 2
In a bowl, combine the cut chicken tenderloin with 1 Tbsp sesame oil, 1 Tbsp minced green onion, and 1 Tbsp minced garlic. Mix well to marinate the chicken. If preparing for baby food, omit the salt and pepper or use only a tiny amount. It’s best to highlight the natural flavors of the ingredients.
Step 3
Heat a pan over medium heat and add the marinated chicken. Stir-fry until the chicken is no longer pink on the outside. It’s important to stir occasionally to prevent burning.

Once the chicken is almost cooked through, add the finely chopped fresh shiitake mushrooms. Continue to stir-fry together for about 1-2 more minutes, allowing the fragrant aroma of the mushrooms to meld with the chicken. It’s ideal when the moisture from the mushrooms has somewhat evaporated.
