Main Ingredients
  • Dried Seaweed 50g (Recommended to use premium or new mother’s grade dried seaweed)
  • Beef 200g (for soup, e.g., brisket or shank)
  • 1 Beef Stock Cube (or 600ml anchovy-kelp broth)
  • 1.5 Tbsp Soy Sauce or Fish Sauce (adjust to taste)
  • 1 Tbsp Sesame Oil
  • 0.5 Tbsp Minced Garlic (optional)

Cooking Instructions

Step 1

First, soak the 50g of dried seaweed in cold water for about 15-20 minutes until fully rehydrated. Once rehydrated, gently rub the seaweed with your hands to remove any grit or impurities. Squeeze out excess water.

Step 2

Rinse the seaweed under running cool water 3-4 times. This step helps to reduce any slight bitterness and ensures a cleaner taste.

Step 3

Cut the 200g of beef into bite-sized pieces (about 2-3 cm). Heat 1 Tbsp of sesame oil in a pot over medium-high heat. Add the beef and stir-fry until it just changes color. Be careful not to overcook, as this can make the beef tough.

Step 4

Add the squeezed seaweed to the pot with the beef and continue to stir-fry. Add 1 Tbsp of soy sauce or fish sauce at this stage and stir-fry together. This will help to infuse the seaweed and beef with flavor. (Optionally, you can add 0.5 Tbsp of minced garlic here and stir-fry.)

Step 5

Pour in 600ml of water (or rice water) and add 1 beef stock cube. Bring the soup to a boil over high heat, then reduce the heat to medium-low once it starts simmering.

Step 6

Let the soup simmer gently over medium-low heat for at least 15-20 minutes, or longer. The longer it simmers, the more the flavors of the seaweed will meld into the broth, creating a richer taste. If the soup tastes a bit bland after simmering, add another 0.5 Tbsp of fish sauce or soy sauce to adjust the seasoning. Enjoy your creamy and savory beef seaweed soup!
