Main Ingredients
- Beef (bulgogi cut or for japchae) 180-200g
- Tofu 1/2 block (approx. 150-200g)
- 1 Onion (medium size)
- 2 Mushrooms (button or similar)
- 1/4 Scallion (green onion)
- Vegetable oil, a moderate amount
Seasoning Ingredients
- 1 Tbsp Sugar (or raw sugar)
- 1 Tbsp Mirin (or cooking wine)
- 2 Tbsp Soy Sauce (brewing type)
- 1 Tbsp Minced Garlic
- Sesame seeds, a moderate amount

Cooking Instructions
Step 1
Prepare all ingredients into bite-sized pieces. Slice the tofu into 1cm thick flat pieces. Slice the onion and mushrooms similarly. Pat the beef dry with paper towels to remove excess moisture, then cut into manageable pieces. Thinly slice the scallion for garnish.
Step 2
Heat about 1 tablespoon of vegetable oil in a pan over medium heat. Add the prepared tofu, onion, and mushrooms and stir-fry until they are lightly browned and some of their moisture has evaporated. Push the cooked ingredients to one side of the pan.
Step 3
In the cleared space of the pan, add the beef and stir-fry quickly over high heat. Cooking the beef until the exterior turns white will help seal in the juices, resulting in a more tender texture.
Step 4
Now it’s time to add the seasonings. Add 1 tablespoon of sugar, 1 tablespoon of mirin, and 2 tablespoons of soy sauce. Stir-fry everything together with the beef and the cooked vegetables and tofu until well combined and the sauce coats the ingredients evenly. Cook for another 1-2 minutes to allow the flavors to meld. Finally, add 1 tablespoon of minced garlic and quickly mix it in. Stir-frying for too long after adding garlic can diminish its fresh flavor, so mix it in just before finishing.
Step 5
Just before turning off the heat, sprinkle generously with the sliced scallions and sesame seeds and give it a final gentle toss. Serve this delicious stir-fry piled high on warm rice! For a touch of heat, you can add a bit of chopped chili pepper according to your preference.
