  • Soaked Black Soybeans 3 measuring cups (soaked for at least 4 hours)

Seasoning Ingredients
  • Water 3 measuring cups
  • Soy Sauce 6 Tbsp
  • Brown Sugar (or Dark Brown Sugar) 5 Tbsp
  • Sesame Seeds, a pinch (for garnish)

Cooking Instructions

Step 1

First, rinse the black soybeans thoroughly. Then, pour enough water to fully submerge the beans and soak them for about 4 hours until they are soft. Proper soaking time is crucial for tender and flavorful Jangjorim.

Step 2

Once soaked, rinse the black soybeans several times under running water to remove any impurities. This will result in a cleaner, more refined taste.

Step 3

Place the rinsed black soybeans in a wide pan or pot. Add 3 measuring cups of water. Bring to a boil over high heat and simmer for about 5 minutes to lightly blanch the beans.

Step 4

After boiling for 5 minutes, add 6 Tbsp of soy sauce to the pan. Soy sauce not only removes any gaminess from the beans but also adds depth to the flavor.

Step 5

Next, add 5 Tbsp of brown sugar (or dark brown sugar). The sweetness of the sugar will meld with the soy sauce, creating the delicious flavor profile of the Jangjorim.

Step 6

Gently stir with a spatula to combine the beans and seasonings. Reduce the heat to medium and continue to simmer for another 5 minutes, allowing the flavors to slowly penetrate the beans.

Step 7

Now, lower the heat to low. Let it simmer gently until most of the liquid has evaporated and the beans are coated in a thick glaze. The beans will start to develop a glossy sheen during this stage.

Step 8
