Ingredients
- 120g small dried anchovies
- 2 Tbsp mayonnaise
- 3 Tbsp honey
- 8 square aburaage (fried tofu pouches)
- 1 Tbsp chopped chives (for garnish)
Cooking Instructions
Step 1
First, prepare the small dried anchovies. Heat a dry pan over medium heat, add the anchovies without any oil, and stir continuously to prevent burning. This process removes any fishy odor and enhances their nutty flavor.

Once the anchovies are lightly golden and toasted, turn off the heat. Using the residual heat of the pan, add the mayonnaise and honey, and mix well until everything is evenly coated. The mayonnaise will coat the anchovies, preventing them from sticking together when mixed with rice, and the honey adds a subtle sweetness.

This stir-fried anchovy mixture can be used immediately for the inari sushi, or it can be stored as a side dish. Once completely cooled, store it in an airtight container in the refrigerator for several days of delicious enjoyment.

Now, let’s make the inari sushi. Prepare the square aburaage pouches. Take out the sushi vinegar seasoning and other sachets that come with the packaging, and get ready to prepare the rice. Gently open the aburaage pouches so they can be filled with rice.

In warm cooked rice, add the sushi seasoning and mix thoroughly to create seasoned sushi rice. It’s best to fill about 2/3 of the square aburaage pouch with the rice. Filling it too full might make it difficult to top with the stir-fried anchovies later.
