First, let’s prepare the eggplant. Wash the eggplant thoroughly, remove the stem, and then slice it diagonally into thick pieces, about 1.5cm thick. Slicing them this way helps the sauce penetrate better and improves the texture.

Heat 2 tablespoons of perilla oil in a pan over low heat. Add the chopped green onions and slowly sauté until they become lightly browned and fragrant, releasing their delicious aroma. Then, add the ground beef and stir-fry over medium-high heat.
