Main Ingredients
  • 4 fresh abalones (medium size, about 100g)
  • 1/4 carrot
  • 3 shiitake mushrooms
  • 3 servings of soaked rice

Seasoning
  • 3 Tbsp sesame oil
  • 1 tsp cooking wine (mirin or rice wine)
  • 1 Tbsp sake (or rice wine)

Cooking Instructions

Step 1

Thoroughly wash the fresh abalones under running water. If using small abalones, about 12 would be suitable; for medium-sized ones, 4 should suffice (approximately 100g).

Step 2

After washing, carefully remove the ‘beak’ or ‘teeth’ of the abalone using a spoon or knife, and then separate the innards from the meat.

Step 3

Finely dice the carrot and shiitake mushrooms so they blend well into the rice. (You can add other ingredients like ginkgo nuts, pine nuts, or chestnuts for a richer flavor. Shiitake mushrooms were omitted in this instance.)

Step 4

Heat a pan over medium-low heat and add 3 tablespoons of sesame oil. Sauté the separated abalone innards first, being careful not to burn them.

Step 5

Once the innards are partially cooked, add the abalone meat, 1 tsp of cooking wine, and 1 Tbsp of sake. Stir-fry briefly. Then, add the pre-washed and soaked rice and stir-fry for just 1-2 minutes. Lightly stir-frying is key to coating the rice grains.

Step 6

Transfer the sautéed ingredients and rice to a rice cooker. Add water according to your usual rice-cooking ratio. You might want to use slightly less water than usual.

Step 7

Once the delicious abalone rice is cooked, serve it generously in a bowl. You can mix it with a simple soy sauce-based seasoning (soy sauce, sesame oil, toasted sesame seeds, etc.) to your preference. Enjoy the chewy abalone and fragrant rice – a guaranteed success for your health today! ^^
