My children are quite picky and tend to be resistant to trying new foods. That’s why I always strive to incorporate a diverse range of nutrients into their meals at home. As a working mom, I’m constantly looking for simple yet highly nutritious dishes that can be prepared quickly using ingredients I already have on hand. It’s perfect as a side dish for kids or a simple, satisfying meal for anyone.
Ingredients
- 200g frozen shrimp
- 1 zucchini
- 0.5 to 1 Tbsp minced garlic
- 1 anchovy broth pack
- 2 Tbsp sesame oil
- 1/2 tsp salted fermented shrimp (saeujeot)
- 250ml water
Cooking Instructions
Step 1
First, let’s prepare a flavorful broth using an anchovy broth pack. Pour 250ml of water into a pot and bring it to a boil with the broth pack. While commercial broth cubes can sometimes have a strong, starchy taste, I prefer using a comprehensive anchovy broth pack (containing anchovies, dried pollack, and kelp) to create a deep and rich broth. Step 2
While the broth is simmering, prepare the vegetables and shrimp. Dice the zucchini into small, bite-sized pieces, about 1cm in size, suitable for children. For the frozen shrimp, briefly soak them in cold water to thaw, then rinse them thoroughly under running water. Cut the shrimp into 4 to 5 pieces each to make them easier for little ones to eat. (Tip: I often buy larger frozen shrimp so the kids can enjoy the texture of the shrimp in their meal.)
Step 3
Heat 2 tablespoons of sesame oil in a pan over medium heat. Add the prepared zucchini and shrimp, and sauté them thoroughly until they are well combined and slightly softened. When the zucchini and shrimp start to release some moisture, pour in the brewed anchovy broth (straining out the broth pack).
Step 4
Bring the mixture to a gentle simmer and allow the flavors to meld. Taste the seasoning at this stage. Depending on the saltiness of your frozen shrimp and the natural sweetness of the zucchini, you might find it perfectly seasoned without any additional salt. In such cases, I often serve it as is for my children. If it does taste a little bland, finely mince the salted fermented shrimp (saeujeot) and add it. Adding minced saeujeot will significantly enhance the flavor and umami of the dish. ^^
