Nutrient-Rich and Creamy Black Sesame Porridge (Heukimja Juk)
Homemade Black Sesame Porridge: Experience the Rich Nutty Flavor of Heukimja with Glutinous Rice Flour
I have a fondness for the smooth texture of porridge and often make it at home. Today, I’ve prepared Heukimja Juk, or black sesame porridge, using black sesame seeds I had on hand. This recipe yields a delightfully creamy and nutty porridge, perfect for a nourishing meal.
Ingredients
- 4 Tbsp black sesame seeds
- 2/3 to 1 cup glutinous rice flour (for adjusting consistency)
- 450ml water
- 1 tsp salt
- 1 Tbsp sugar (optional)
Cooking Instructions
Step 1
Place 4 tablespoons of black sesame seeds into a blender. Grind them until they form a fine powder. If the mixture is too dry, you can add a very small amount of water. Grinding them finely, until very few granules remain, is key to achieving a smooth texture.

In a pot, add 2/3 cup to 1 cup of glutinous rice flour. The amount of glutinous rice flour will determine the porridge’s thickness, so adjust it according to your preference.

Gradually pour 450ml of cold water into the glutinous rice flour. Using a whisk or spatula, stir thoroughly to ensure there are no lumps, completely dissolving the flour. This step is crucial for a smooth consistency.

Add 1 teaspoon of salt to season the porridge and mix well.

Now, place the pot over medium heat and stir continuously to prevent sticking and lumps. Once the porridge begins to boil, reduce the heat to low and continue stirring gently to avoid burning.

As the porridge cooks and thickens, you will notice a sticky, chewy texture characteristic of cooked glutinous rice. This indicates that the glutinous rice flour is fully cooked.

Add the finely ground black sesame powder to the pot. Stir very quickly to ensure it incorporates smoothly and doesn’t clump. Clumps can affect the taste and texture of the porridge, so smooth integration is important.

If you prefer a sweeter porridge, stir in 1 tablespoon of sugar. You can also use honey as a sweetener.
