Nostalgic Old-Fashioned Omurice (Omelet Rice)
Classic Ketchup Omurice Recipe That Evokes Fond Memories
I made and enjoyed this ketchup omurice, a taste of my childhood, after a long time! It was delicious back then, and it’s still just as delicious now. Enjoy a comforting and satisfying meal with this nostalgic recipe. 🍳🍚
Main Ingredients
- 1 bowl of leftover rice or a hot pack of rice (approx. 200g)
- 100g Spam or Luncheon Meat
- 2 fresh eggs
- 1/2 medium onion
- 1/4 carrot
- 4 Tbsp ketchup (adjust to taste)
- Pinch of black pepper (freshly ground pepper adds extra fragrance)
Cooking Instructions
Step 1
First, prepare all the ingredients for your delicious omurice. Wash and pat dry the onion and carrot. Take out the Spam. Crack the eggs into a clean bowl and whisk them.
Step 2
Dice the onion into small cubes of about 0.5cm. This size ensures it blends well with the rice and cooks evenly without becoming too mushy or hard to chew.
Step 3
Dice the Spam into similar-sized cubes, about 0.5cm, just like the onion. The savory flavor of the Spam will add depth to the fried rice.

Dice the carrot into 0.5cm cubes as well, matching the size of the onion and Spam. The sweetness and color of the carrot will make the omurice even more appetizing.

Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the diced onion, Spam, and carrot, and stir-fry until the vegetables release their sweetness, about 2-3 minutes.

Sprinkle a pinch of black pepper while stir-frying to enhance the aroma. The peppery scent will elevate the flavors of the ingredients.

Once the onion becomes translucent, add the bowl of warm rice. Break up the rice with a spatula and stir-fry with the other ingredients until it’s fluffy and well combined, about 1 minute. Ensure the rice doesn’t stick to the pan.

Now, add 4 Tbsp of ketchup to the rice and stir-fry for another 30 seconds. Coat each grain of rice with the ketchup, allowing its sweet and tangy flavor to be absorbed into the rice.

Transfer the delicious fried rice to a separate bowl for a moment. This prevents the rice from sticking to the pan and makes the next step, cooking the egg, much easier.

Crack the 2 eggs into the prepared bowl. Whisk them thoroughly with a fork or whisk until the whites and yolks are completely combined. Removing the chalazae will result in a smoother omelet layer.

Heat a little oil in another pan over low heat. Pour the whisked egg mixture thinly and spread it out to form a round shape. Cooking it into an oval shape will help it drape nicely over the rice later. Cook until the edges of the egg just begin to set.

When the top of the egg is still moist and slightly undercooked, spoon the fried rice onto the center of the egg. Shape the rice to fit the size of the egg, adjusting the amount of rice as needed.

Now for the grand finale of the omurice! Prepare a serving plate. Tilt the pan slightly over the plate, and gently slide the egg over the edge of the pan onto the plate, allowing the egg to wrap around the rice. Shape it nicely.
Step 14
Finally, drizzle ketchup over the omurice to create an appealing presentation. You can make zig-zags, draw a heart, or get creative with your topping!
