Side dishes that I disliked in my childhood have now become favorites that evoke memories. This is one of those beloved banchan (side dishes). I’m introducing a stir-fried radish greens dish, bursting with the crisp texture and savory flavor of young radish kimchi. Make this delightful side dish that will have you finishing a bowl of rice in no time!
Main Ingredients
- Generous amount of well-aged radish kimchi (rinsed in water)
- 2 Tbsp perilla oil (deulgireum)
- 1 Tbsp sugar
- 1 Tbsp toasted sesame seeds
- 2 Tbsp minced garlic
Cooking Instructions
Step 1
First, let’s prepare the radish kimchi for our delicious stir-fried radish greens recipe. Cut the radish kimchi into bite-sized pieces.
Step 2
If your radish kimchi is too sour or salty, rinse it 2-3 times thoroughly under cold running water to slightly reduce the saltiness and sourness. Then, soaking it in cold water for about 10 minutes will result in an even crisper and cleaner taste.

Heat a pan, add a generous amount of 2 Tbsp of perilla oil, and stir-fry the prepared radish kimchi over medium heat until it’s slightly cooked. At this stage, add 2 Tbsp of minced garlic and stir-fry until fragrant. Be careful not to burn the garlic.

Once the kimchi is somewhat cooked, add 1 Tbsp of sugar and stir-fry once more to ensure all ingredients are well combined. The sugar will balance the sourness of the radish kimchi and enhance its savory taste.

Now, cover the pan with a lid, reduce the heat to low, and let it simmer gently for at least 10 minutes, allowing the radish greens to soften and the seasonings to penetrate. Stir occasionally to prevent sticking.

Finally, sprinkle generously with 1 Tbsp of toasted sesame seeds for a nutty aroma. The sesame seeds add a wonderful nutty flavor with every bite.
