Cooking Instructions
Step 1
First, prepare the bread slices. If using frozen bread, lightly toast it in a preheated oven at 180°C (350°F) for about 8 minutes per side. For fresh bread, you can lightly toast it in a pan with a small amount of butter for an even richer flavor. Freshly toasted bread offers a crispy exterior and a moist interior.
Step 2
Cool the toasted bread by standing it upright. This allows air to circulate underneath, preventing sogginess and keeping it extra crispy.
Step 3
Wash and thinly shred 300g of cabbage. Finely chop a small amount of carrot and scallion to add color and flavor. While optional, these additions bring a pleasant crunch and subtle sweetness.
Step 4
In a large bowl, combine the shredded cabbage, carrot, and scallion. Crack in 3 eggs, add a pinch of salt and pepper, and mix everything well until thoroughly combined. The egg should softly coat all the ingredients.
Step 5
Heat a square pan over medium heat and add a little oil or butter. Canola oil allows for clean frying without burning, while butter adds a richer flavor. If using butter, be mindful of the heat to prevent it from burning. Pour all the cabbage mixture into the pan.
Step 6
Using a spoon or spatula, gently tuck in any cabbage mixture sticking out from the edges to create a neat, rectangular shape. The cabbage will soften as it cooks, making it easier to shape. When the mixture turns opaque and starts to move slightly on the pan, it’s time to flip.
Step 7
To make flipping easier, cut the thick fritter in half across the pan. Press down lightly with a spatula to separate the halves cleanly. This makes handling much more convenient and prevents breakage.
Step 8
Now, carefully flip the fritter. Slide a wide spatula underneath the fritter, making sure it goes in deep, and gently flip it over. Flipping the halved pieces one at a time helps maintain their shape.
Step 9
The other side is also nicely golden brown and appetizing! Cut each half in half again and cook the remaining sides until they are also golden brown. Continue to cook over medium-low heat to ensure it cooks through evenly without burning.
Step 10
Once cooked, remove the cabbage egg fritters from the pan and let them cool slightly. You can use one piece per toast or two pieces for a more substantial sandwich. Prepare them to your desired size.
Step 11
Prepare the ham slices to add flavor to your toast. Lightly pan-frying the ham can enhance its taste. We’ll be using two slices of ham per toast.
Step 12
Spread a layer of strawberry jam evenly on the toasted bread slices. Apply generously to both the top and bottom pieces for a burst of sweetness in every bite.
Step 13
Place the prepared cabbage egg fritter on top of the jam-spread bread slice. The thick fritter adds a satisfying heartiness to the toast.
Step 14
For a touch of sweetness reminiscent of old street toast, drizzle a little condensed milk instead of sugar. Then, add a generous amount of ketchup for a sweet and tangy contrast. Adjust the ketchup amount to your preference.
Step 15
Finally, layer the cooked ham and cheese slices on top, then cover with the other slice of bread to complete your nostalgic cabbage egg toast! Enjoy this simple yet special toast, packed with flavor and care.
