Main Ingredients
  • 1/2 zucchini
  • 1/4 carrot
  • 4 shiitake mushrooms
  • 2 bowls of cooked rice, warm

Seasoning Sauce
  • 2 Tbsp soy sauce
  • 1 Tbsp sesame oil
  • A pinch of toasted sesame seeds (to taste)

Cooking Instructions

Step 1

First, prepare the vegetables for your bibimbap. Wash them thoroughly. Slice the zucchini and carrot into thin half-moon shapes. For the shiitake mushrooms, trim off the tough stems and slice them thinly. This slicing method ensures the vegetables cook evenly and have a pleasant texture.

Step 2

Place the prepared zucchini, carrot, and shiitake mushrooms into a pot and cover it with a lid. Cook over low heat for about 15 minutes, allowing the vegetables to steam gently. To keep the moisture locked in, you can cover the steam vent on the lid with chopsticks or a kitchen towel dampened with water. Be careful not to overcook the vegetables; they should be tender but not mushy.

Step 3

While the vegetables are cooking, let’s make the delicious seasoning sauce! In a small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of fragrant sesame oil, and a pinch of toasted sesame seeds. Mix everything well. Feel free to adjust the amount of sesame seeds to your liking, or add a little minced garlic for extra flavor.

Step 4

Arrange the steamed vegetables, cooked with their own moisture, beautifully on top of the warm rice. Presenting the vegetables nicely makes the bibimbap look even more appetizing.

Step 5

Finally, serve with the delicious seasoning sauce you just prepared. Your super simple vegetable bibimbap, which allows you to enjoy the natural sweetness and aroma of the vegetables, is now ready! Mix everything together well and savor your meal!
