Soft Tofu Gratin: A Guilt-Free, Diet-Friendly Gratin Made with Soft Tofu!
Did you know that soft tofu (sundubu) has only 47kcal per 100g? It’s incredibly low in calories and high in protein, making it a fantastic choice for anyone on a diet. However, soft tofu can be quite bland on its own, which is why adding various flavors and ingredients really makes it shine! Today, we’ve transformed it into a delicious baked gratin by incorporating a medley of ingredients. Enjoy this healthier, flavorful gratin that won’t weigh you down!
Main Ingredients
- 1 block soft tofu (approx. 300-350g)
- 1 cup tomato spaghetti sauce (approx. 200ml)
- 1/2 cup mozzarella cheese (approx. 50g)
- 1/4 onion
- 1/4 red bell pepper
- 1/4 green bell pepper
- 3 button mushrooms
- 1 imitation crab stick (e.g., surimi)
- 5 Vienna sausages
- 3 Tbsp sweet corn (canned)
- 2 pinches salt
- 2 pinches black pepper
Cooking Instructions
Step 1
First, we’ll drain the soft tofu to enhance its subtle flavor. Carefully open the tofu package, cut it in half, and place it in a sieve set over a bowl. Sprinkle coarse salt evenly over the tofu; this helps draw out moisture through osmosis. Let it drain for about 10-15 minutes.
Step 2
Cut the imitation crab stick into bite-sized pieces (about 1-2 cm long). Slice the Vienna sausages diagonally; making small cuts in the sausages will help them absorb more flavor from the sauce.
Step 3
Wash and deseed the red bell pepper, green bell pepper, and onion. Slice them thinly into strips (about 0.5 cm thick). Clean the button mushrooms and slice them thinly (about 0.3 cm thick).
Step 4
Heat a little oil in a pan over medium heat. Add the prepared vegetables (onion, bell peppers, mushrooms), imitation crab stick, Vienna sausages, and sweet corn. Season with 2 pinches of salt and 2 pinches of black pepper to bring out the ingredients’ natural flavors. Stir-fry until the vegetables are slightly softened, about 3-5 minutes.
Step 5
Pour 1 cup of tomato spaghetti sauce into the pan with the sautéed ingredients. Stir well and cook together over medium-low heat for about 2-3 minutes until the sauce coats everything evenly. Be careful not to overcook or let the sauce become too dry.
Step 6
Using a spoon, gently scoop out the drained soft tofu into an oven-safe dish. Try to keep the tofu pieces relatively intact. Spoon the vegetable and sauce mixture evenly over the tofu.
Step 7
Finally, generously sprinkle mozzarella cheese over the top, according to your preference. The cheese will melt and create a wonderful topping. For an extra touch of color and aroma, sprinkle with dried parsley. You can omit the parsley if you don’t have it.
Step 8
Bake in a preheated oven at 180°C (350°F) for about 10 minutes, or until the mozzarella cheese is melted and golden brown. Oven temperatures can vary, so keep an eye on it and adjust the baking time as needed. Enjoy your warm and delicious soft tofu gratin!
