  • Occasion : Snack
  • Cooking : Boiled
  • Servings : 1 serving
  • Cooking Time : Within 60 minutes
  • Difficulty : Anyone

Main Ingredients

  • 90g Potatoes: This is the weight after peeling and washing.
  • 25g Minced Beef: Using a cut with less fat will result in a more delicate flavor.
  • 25g Minced Vegetables: Feel free to use up leftover vegetables from your fridge (onion, carrot, zucchini, etc.).
  • 1 slice Cheese: Use your preferred cheese, such as cheddar or mozzarella.

Cooking Instructions

Step 1

First, thoroughly peel the potatoes. Then, cut them into bite-sized pieces, about 2-3 cm in size. Cutting them uniformly will ensure they cook evenly.

Step 1

Step 2

Place the cut potatoes in a pot and add enough water to fully cover them. Bring to a boil over high heat, then reduce to medium-low heat and simmer for about 20-30 minutes, or until the potatoes are completely tender. They are cooked when a fork can be easily inserted.

Step 2

Step 3

While the potatoes are boiling, prepare any leftover vegetables you have in the refrigerator, such as carrots, onions, or bell peppers. Finely mince these vegetables to ensure a smooth texture in your salad that blends well with the potatoes.

Step 3

Step 4

Heat a lightly oiled pan over medium-low heat. Add all the minced vegetables and sauté them gently until softened and their natural sweetness is released. It’s important to cook them until they are tender.

Step 4

Step 5

Once the harder vegetables, like carrots, are somewhat cooked, add the minced beef. Break it up with a fork and stir-fry until it turns brown and the juices have evaporated. Cooking the beef thoroughly will enhance its flavor.

Step 5

Step 6

Drain the boiled potatoes and place them in a large bowl while still warm (just enough so they are not scalding). Add the slice of cheese and the cooked beef and vegetable mixture. Using a fork or spatula, gently mash the potatoes and mix everything together until well combined. Your delicious potato salad is ready!
