Hotteok-Tteokbokki: A Sweet and Chewy Fusion Dish with Hotteok Flavor
This recipe, inspired by Chef Ryu Soo-young’s creation from the show ‘Pyeonstorang,’ introduces how to make ‘Hotteok-Tteokbokki.’ It’s a delightful fusion dish that combines the chewy texture of tteokbokki with the sweet, comforting flavor of Korean hotteok. Perfect as a unique snack or a special meal for both kids and adults!
Main Ingredients
- 300g Tteokguk rice cakes (approx. 2 cups)
- 200ml Water (1 cup)
- 4 Tbsp Sugar
- 3 Pinches Salt
- 2 Tbsp Sesame Oil
- 2 Tbsp Toasted Sesame Seeds
- 2 Pinches Cinnamon Powder (adjust to taste)
- 1 Packet of Haru Kenwa (mixed nuts, for topping)
Cooking Instructions
Step 1
1. Prepare the tteokguk rice cakes. If using frozen rice cakes, soak them in cold water for about 30 minutes to thaw and soften them. Drain the thawed rice cakes well.
Step 2
2. Place all the prepared rice cakes in a wide frying pan. Add 200ml (1 cup) of water. Cook over medium heat, allowing the rice cakes to start softening.
Step 3
3. Once the rice cakes begin to cook, add 4 Tbsp sugar, 2 Tbsp toasted sesame seeds, 2 Tbsp sesame oil, and 3 pinches of salt. These seasonings will infuse into the rice cakes, imparting that delicious hotteok flavor.
Step 4
4. Continue to cook over medium heat after adding the seasonings. Let the water in the pan gradually reduce, allowing the sauce to coat the rice cakes. Stir occasionally to prevent sticking or burning.
Step 5
5. When the liquid has reduced and the rice cakes look glossy and slightly sticky, lower the heat to low. Cooking over high heat can make the rice cakes tough or burnt.
Step 6
6. While the heat is low, sprinkle in 2 pinches of cinnamon powder. The aroma of cinnamon will blend beautifully with the sweet flavors, creating a richer taste. (Feel free to add a little more if you love cinnamon.)
Step 7
7. After adding the cinnamon powder, gently stir and let it simmer for another 1-2 minutes, ensuring the rice cakes are evenly coated with the sauce and cinnamon flavor.
Step 8
8. Transfer the finished Hotteok-Tteokbokki to a serving plate, arranging it attractively.
Step 9
9. Take out 1 packet of Haru Kenwa (mixed nuts) to be used as a topping.
Step 10
10. Get a bowl or a similar-sized vessel to crush the nuts.
Step 11
11. Place the nut packet on a flat surface, invert the bowl over it, and press down firmly to coarsely crush the nuts. It’s best to crush them so there’s still some texture remaining, rather than making a fine powder.
Step 12
12. Finally, sprinkle the crushed Haru Kenwa over the Hotteok-Tteokbokki. Your unique fusion dish, Hotteok-Tteokbokki, with its crispy topping and chewy, sweet hotteok-inspired interior, is now complete! Enjoy your delicious creation!
