  • Shredded cabbage (approx. 70g / 1 cup)
  • 1/4 onion
  • 1/4 carrot
  • 1/4 apple
  • Approx. 1/4 can of luncheon meat

Cooking Instructions

Step 1

Julienne the luncheon meat. To remove excess oil and additives, pour boiling water over the julienned meat while it’s in a colander, then drain well. This step ensures a cleaner taste.

Step 2

Finely julienne the onion. To mellow its sharpness, soak the julienned onion in cold water for about 10 minutes. Afterwards, drain it thoroughly. This process retains the onion’s sweetness and crispness.

Step 3

Thinly julienne the cabbage, carrot, and apple. (The total weight of these vegetables, excluding the ham, should be around 220g). Feel free to add or substitute with other vegetables you have on hand. This is a great recipe for using up leftover produce!

Step 4

Let’s make the special Thousand Island dressing! In a bowl, combine 1 tablespoon of ketchup, 3 tablespoons of mayonnaise, 4 tablespoons of chopped pickles, and a pinch of black pepper. Mix well. Taste the dressing and adjust the sweetness by adding more oligosaccharide or sugar, if desired.

Step 5

I added half a tablespoon of oligosaccharide for a touch of sweetness, which makes the dressing appealing even to children. This balance of sweet and tangy is perfect!

Step 6

Add all the prepared vegetables and luncheon meat to the dressing. Gently toss everything together until well combined, being careful not to mash the vegetables. Fill your chosen bread generously with this delicious salad mixture, and your Salad Bread is ready!

Step 7

The salad filling itself is flavorful enough, so you don’t need extra spread inside the bread. However, if you’re preparing Salad Bread for a picnic or lunchbox, consider lightly buttering the cut surfaces of the bread before adding the filling. This acts as a barrier, preventing the bread from becoming soggy and keeping it fresh for longer.

Step 8

With its refreshing and crunchy texture, Salad Bread is simple to make and uses accessible ingredients. It’s a versatile dish that makes you want to pack a basket and head out for an adventure. Give this easy recipe a try!
