Homemade Cereal Bars: Way Better Than Store-Bought!

Ingredients
- 4 cups cereal (approx. 120g)
- 1 cup walnuts (approx. 100g)
- 4 Tbsp corn syrup (oligosaccharide)
- 2 Tbsp honey
Cooking Instructions
Step 1
Place the cereal in a large plastic bag and lightly crush it with your hands or a rolling pin. This will give the cereal bars a pleasant texture, so avoid crushing it too finely; small clusters are desirable.

To enhance the nutty flavor, toast the walnuts in a dry pan over low heat for about 3 minutes, stirring constantly to prevent burning. Once toasted, let them cool slightly.
Step 3
In a pan, combine 2 tablespoons of water, 4 tablespoons of corn syrup (oligosaccharide), and 2 tablespoons of honey. Bring this mixture to a boil over medium-low heat. Once boiling, reduce the heat and add the crushed cereal and toasted walnuts. Stir continuously with a spatula until the mixture starts to clump together and the syrup evenly coats the ingredients. Continue to cook for about 1-2 minutes until it forms a cohesive mass. This step is crucial for the bars to set properly.
Step 4
Line a square pan or baking sheet with parchment paper. This makes removal much easier later. Pour the cereal and walnut mixture into the prepared pan. Use the back of a spatula or spoon to press the mixture down firmly and evenly, creating a flat surface. Aim for a thickness of about 1.5 to 2 cm.
Step 5
Let the pressed cereal mixture sit at room temperature for about 5 minutes to cool slightly. It’s best to cut the bars while they are still slightly warm and pliable, not fully hardened. Use a knife or a pizza cutter to slice them into your desired bar shapes and sizes. If the mixture has become too hard to cut, try warming the knife briefly in hot water and drying it before slicing.

Once cut, you can enjoy your homemade cereal bars in two ways: For a crispier texture, allow them to cool completely and then store them in the refrigerator. For a slightly chewier texture, let them cool completely at room temperature. Enjoy your delicious homemade treat! ^^
