Main Ingredients
  • 2 eggs
  • 3-4 Tbsp curry powder (adjust to your taste)
  • 1.5 Tbsp butter
  • 1/2 onion
  • 200ml milk
  • Pinch of black pepper
  • Warm cooked rice

Cooking Instructions

Step 1

First, wash half an onion thoroughly and slice it thinly. Slicing it thinly helps the onion’s sweetness release and become tender when sautéed.

Step 2

Heat a pan over medium heat and add 1.5 tablespoons of butter. Be mindful of the heat to prevent the butter from burning.

Step 3

Once the butter begins to melt slowly in the pan, prepare for the next step. A gentle aroma of butter will start to fill the air.

Step 4

When the butter is completely melted, add all the thinly sliced onions to the pan. Sauté them over medium-low heat until they become translucent and soft, about 3-5 minutes. You’ll notice the onions releasing their natural sweetness.

Step 5

Once the onions are translucent and smell sweet, pour in 200ml of milk. Adding milk will make the curry even smoother and richer.

Step 6

As the milk gently comes to a simmer, add 3-4 tablespoons of curry powder to the pan. The amount of curry powder can be adjusted based on the saltiness of your specific curry powder or your personal preference.

Step 7

Whisk the curry powder thoroughly with a whisk or spatula to ensure it dissolves smoothly without lumps. Stir until the milk and curry powder are completely combined and the curry sauce reaches a smooth, thickened consistency.

Step 8

As the curry sauce begins to thicken, carefully crack 2 eggs into the pan. You can add them whole to cook gently in the curry, or lightly whisk them beforehand if you prefer.

Step 9

Finally, add a pinch of black pepper for extra flavor and gently stir to incorporate the eggs into the curry, allowing them to cook softly. Be careful not to overmix as they cook.

Step 10

Your rich and delicious butter egg curry is now complete! The creamy texture and the inviting aroma of butter are sure to whet your appetite.

Step 11

Serve the warm rice in a bowl, then place the finished egg curry either next to or on top of the rice. Just before eating, mix the curry with the rice little by little for a truly satisfying and hearty meal!
