Batter and Ingredients
  • 150g Cabbage, thinly shredded
  • 2 cups Tempura flour
  • 1.5 cups Water
  • 8 Frozen shrimp, thawed and tails removed
  • 2 Sausages, thinly sliced
  • 1/2 Onion, thinly sliced
  • 30g Carrot, thinly julienned
  • 1 Scallion or green onion, finely chopped

Toppings
  • 1 handful Bonito flakes (katsuobushi)
  • 3 Tbsp Tonkatsu sauce
  • 1 Tbsp Mayonnaise

Cooking Instructions

Step 1

First, prepare the vegetables that will give texture to your Okonomiyaki. Wash the cabbage, measure out 150g, and thinly shred it. Shredding it thinly ensures a tender texture when cooked.

Step 2

Finely chop 1 scallion or green onion. The fresh aroma of the onion will enhance the flavor of the Okonomiyaki. Feel free to use other herbs if you like.

Step 3

Peel and thinly slice 1/2 onion. The sweetness of the onion will blend with the batter, adding a savory depth of flavor.

Step 4

Peel and julienne 30g of carrot into thin strips. The carrots not only add visual appeal but also a subtle sweetness and a slight crunch.

Thinly slice 2 sausages into bite-sized pieces, avoiding making them too thick. Children often love this ingredient, so don’t skip it!

Thaw the 8 frozen shrimp by soaking them in cold water. Pat them dry with paper towels and remove the tail shells. The firm texture of the shrimp will add a wonderful element to your Okonomiyaki.

Now it’s time to make the batter. In a large bowl, combine the shredded cabbage, onion, carrot, sliced sausages, prepared shrimp, and chopped scallion. Step 8
