Cooking Instructions
Step 1
First, prepare the oatmeal. Measure out about 1.5 cups (or equivalent to 2 small rice bowls) of oatmeal and place it in a large mixing bowl. You can use either quick oats or rolled oats, depending on your preference.
Step 2
Now, let’s add the nuts and beans that will enhance the flavor and texture of your granola. We’re using one handful of boiled black beans (about 100g) and 3 Brazil nuts. If the Brazil nuts are large, you can chop them into smaller pieces. Feel free to substitute with other nuts like almonds or walnuts. Lightly crush them with your hands or coarsely chop them with a knife before adding them to the bowl.
Step 3
It’s time to add the seasonings that will bring your granola to life. Start by pouring 3 tablespoons of cooking oil into the bowl. Use a neutral-flavored vegetable oil such as canola oil or grapeseed oil.
Step 4
Add 2 to 3 tablespoons of oligosaccharide or honey for sweetness. You can adjust the amount of sweetener to your liking. Honey can also be used for a richer flavor.
Step 5
To enhance the savory notes, add a tiny pinch of salt – about two pinches between your fingers. A small amount of salt will further amplify the sweetness and nuttiness.
Step 6
Finally, add a pinch of cinnamon powder for a warm, aromatic flavor. Cinnamon powder is optional, but it adds a wonderful depth to the granola. Now, use a spatula or your hands to thoroughly mix all the ingredients. Ensure the oatmeal and nuts are evenly coated with the seasoning mixture.
Step 7
Spread the prepared granola mixture evenly in the air fryer basket lined with parchment paper. Cook at 160°C (320°F) for 25 minutes. To ensure even toasting, it’s recommended to take out the basket and stir the granola about halfway through, around the 10-12 minute mark. Keep an eye on it to prevent burning. Once golden brown and crispy, your delicious homemade black bean granola is ready! Let it cool completely before storing it in an airtight container.
