First, prepare half a block of firm tofu. It’s crucial to remove as much moisture as possible from the tofu. By pressing it firmly with your hands to squeeze out the water, you’ll ensure it holds together better when cooking and results in a firmer texture.

Separate the 4 eggs into yolks and whites. To the egg whites, add the squeezed-out tofu. Mash the tofu finely with a fork or chopsticks until smooth and well combined. Ensuring the tofu is mashed without lumps is key.

Add a tiny pinch of salt to the mixture of tofu and egg whites to season it. Be careful not to add too much, as it can become too salty. It’s best to taste and adjust as needed.
