  • 3 medium potatoes
  • 1 handful dried seaweed (approx. 50g when rehydrated)
  • 1 tsp salt (adjust to taste)
  • 1 Tbsp soup soy sauce (for added umami)
  • 800ml rice water (about 4 cups)

Step 1

Today, we’re making a truly delightful Potato Seaweed Soup, a perfect harmony of fluffy potatoes and tender seaweed. Using rice water as a base will give the soup a wonderfully deep and comforting flavor.

First, soak the dried seaweed in cold water for about 15-20 minutes until fully rehydrated. Rinse the softened seaweed thoroughly under running water, squeeze out excess water, and cut it into bite-sized pieces (about 3-4 cm). For the rice water, lightly rinse the rice about twice, discarding the water, then collect the third or fourth rinse water, about 800ml. This will create a savory and flavorful broth base. Add 1 teaspoon of salt now to begin seasoning.

Step 3

Next, add 1 tablespoon of soup soy sauce to impart a deep umami flavor to the broth. If you find it’s not salty enough, you can add more soup soy sauce or salt to reach your desired taste. Peel the prepared potatoes and cut them into roughly 1.5cm cubes (bite-sized pieces). Add these to the boiling rice water. Adding the potatoes first allows their subtle sweetness and starch to release into the broth, making it even more delicious.

Step 4

Once the rice water and potatoes are added and brought to a boil over high heat, reduce the heat to medium once the soup starts simmering vigorously. Add all the rehydrated seaweed you prepared. Let it simmer.
