Nest Ramen Poke Salad: A Refreshing and Healthy Option
In response to the growing interest in healthy eating and dieting, we’ve created a recipe that allows you to enjoy ramen without the calorie worries. This refreshing diet ramen poke salad uses Nest Ramen, combined with fresh vegetables and lean chicken breast. You can customize the vegetables by adding or removing them according to your preference, making it a healthy and low-calorie meal. By reducing the noodle portion and increasing the vegetable intake, this recipe is not only good for your health but also significantly lowers the calorie count. One package of Nest Ramen serves two people, offering a lighter way to enjoy ramen.
Main Ingredients
- 1 package Nest Ramen
- 1/2 chicken breast (approx. 100-120g)
- 1/2 cucumber
- 1/2 onion
- 1/2 carrot
- 1/8 red cabbage (about 1-2 leaves)
- 5 cherry tomatoes
- 20ml Sriracha sauce (approx. 1.5 Tbsp)
- Pinch of salt
Cooking Instructions
Step 1
First, prepare the Nest Ramen and all the ingredients for the poke. (The vegetables pictured are generously portioned; please refer to the recipe for the exact amounts.)
Step 2
Thinly slice the onion, cucumber, carrot, and red cabbage into julienne strips. Halve the cherry tomatoes.
Step 3
Bring a pot of water to a boil with a pinch of salt. Add the chicken breast and poach for about 7 minutes until cooked through. Once cooked, drain, let it cool slightly, and then shred it thinly along the grain. Shredding it this way makes the texture more tender and enjoyable.
Step 4
In another pot, bring water to a boil and cook the Nest Ramen noodles and dried garnish for about 3 minutes until tender. Rinse the cooked noodles under cold water and drain them well.
Step 5
Dissolve the liquid soup base from the Nest Ramen in 250ml of cold water. Add the julienned onion, cucumber, carrot, and red cabbage to the seasoned water, excluding the cherry tomatoes, and let them marinate for about 15 minutes. This step helps the vegetables retain their crispness while absorbing the flavor.
Step 6
Carefully strain the liquid from the vegetable marinating bowl through a sieve, keeping the clear broth. Pour just enough of this broth into your serving bowl to lightly cover the bottom. Any excess broth can be saved for other uses or discarded.
Step 7
Add Sriracha sauce to the poke according to your taste preference, about 1-2 tablespoons. You can add more if you like it spicier, or less if you prefer a milder flavor. Sriracha adds a nice kick and depth.
