Healthy Low-Sodium Anchovy Stir-Fry for Kids

This delicious anchovy stir-fry is packed with calcium, essential for growing children, and also helps improve brain development and memory. Because it’s a side dish for kids, we’ve cooked it with a low-sodium seasoning to ensure it’s not too salty and has a gentle flavor. Make this nutritious and appetizing side dish at home with ease!
Ingredients
- 50g small dried anchovies
- 1 Tbsp olive oil
- 1/2 Tbsp soy sauce
- 1/2 Tbsp cooking wine (mirin)
- 1/2 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- A pinch of sugar
- 1/2 Tbsp corn syrup (oligo당)
Cooking Instructions
Step 1
First, heat a dry pan over medium-low heat. Add the small dried anchovies and stir-fry them to remove moisture. This process helps make the anchovies crispy. Be mindful of the heat to prevent burning, and if the heat seems too high, reduce it to low and stir gently to dry them out.
Step 2
Lower the heat to low, then add 1 Tbsp of olive oil and continue to stir-fry the anchovies. Stir until the anchovies are evenly coated with the oil. They will start to become slightly crispy. Turn off the heat as soon as this happens. Be careful not to overcook, as they can become too hard.
Step 3
With the heat off, add 1/2 Tbsp soy sauce, 1/2 Tbsp cooking wine, and a pinch of sugar to the pan. Mix well with the anchovies to ensure the seasonings are evenly distributed and absorbed.
Step 4
Now, turn the heat back on to low and stir-fry again. Since sugar is added, they can easily burn, so maintaining a low heat is crucial. Stir-fry gently just until the anchovies are lightly coated with the seasonings. Then, add 1/2 Tbsp of corn syrup and stir briefly to coat them with a glaze. The corn syrup will make the anchovies even crispier. Turn off the heat immediately once they are crispy.
Step 5
After turning off the heat, add 1/2 Tbsp of sesame oil and 1 Tbsp of toasted sesame seeds. Mix well to combine. This completes your delicious anchovy stir-fry. Gently mix with the residual heat to enhance the nutty aroma.
