  • 9 sheets of fried tofu pouches (Aburaage or seasoned tofu pouches)
  • 1/2 block of firm tofu (drained well)
  • 1/2 onion
  • 2 Korean green chilies (adjust to your spice preference)
  • 1/5 carrot
  • Pinch of salt
  • A little vinegar (to adjust sourness)
  • 1 Tbsp sesame seeds
  • A little sesame oil

Cooking Instructions

Step 1

Thoroughly squeeze out the water from the tofu using a cheesecloth or kitchen towel. This step is crucial for achieving a texture similar to rice grains and preventing the filling from becoming mushy. Finely mince the onion, Korean green chilies, and carrot. Lightly season the minced vegetables with a pinch of salt and sauté them in a pan over medium-low heat until slightly softened. Be careful not to overcook them, as you want to retain some of their crispness.

In a bowl, combine the drained tofu and the sautéed vegetables. Add the toasted sesame seeds, a splash of vinegar for a tangy kick, and a drizzle of sesame oil for aroma. Use a spatula or fork to gently mix all the ingredients together until well combined. Ensure the tofu is mashed and evenly distributed with the vegetables for a cohesive filling.
