This dish is inspired by the renowned ginseng region of Punggi, Gyeongsangbuk-do. Punggi is famous not only for fresh ginseng but also for its red ginseng. I came across a unique ingredient called ‘makji’, which refers to the remaining solid residue after red ginseng extraction or naturally imperfect ginseng roots. Though visually less appealing, ‘makji’ possesses the same taste and health benefits. Pesto and Chicken Ingredients
- 1 ginseng root
- 20g fresh basil
- 3 Tbsp extra virgin olive oil
- 2 Tbsp pine nuts or hulled perilla seeds
- 1 Tbsp salt
- 2-3 Tbsp fresh lemon juice

Step 1
Let’s start by making the delicious Ginseng Basil Pesto! In a blender or food processor, combine: 1 thoroughly cleaned ginseng root, 20g of fresh basil, 3 tablespoons of extra virgin olive oil, 2 tablespoons of pine nuts or hulled perilla seeds, 1 tablespoon of salt, and 2-3 tablespoons of fresh lemon juice. Blend until you achieve a smooth pesto consistency. Taste and adjust seasoning with more salt or lemon juice if desired, for a perfectly balanced flavor.

Next, prepare the ingredients for the couscous salad. Dice the chicken breast or thigh meat into bite-sized pieces and cook them through (you can boil, grill, or steam them). Finely chop the bell pepper, celery, and onion. If using canned peas, drain them well.
