Super Easy No-Flour/No-Oven Golden Cheese Madeleine Recipe

We’ve made madeleines using healthy rice flour and almond flour instead of wheat flour! Enjoy these moist and tender madeleines with a rich cheese flavor.

Ingredients
  • 90g unsalted butter
  • 80g sugar
  • 2 eggs (room temperature)
  • 70g rice flour (sifted)
  • 60g almond flour (sifted)
  • 20g golden cheese powder
  • 5g lemon juice (approx. 1 tsp)
  • 3g salt (approx. 1/2 tsp)
  • 4g baking powder (approx. 1 tsp)

Cooking Instructions

Step 1

First, in a bowl, combine the 2 room-temperature eggs and 80g of sugar. Whisk them gently until the sugar is dissolved. This step ensures a smooth batter.

Step 2

Melt the 90g of unsalted butter by microwaving it for about 30 seconds. It should be melted but not hot.

Step 3

Slowly pour the melted butter from step 1 into the egg and sugar mixture from step 0, whisking continuously. Mix until well combined and emulsified, ensuring the butter doesn’t separate.

Step 4

In a separate bowl, sift together 70g of rice flour, 60g of almond flour, and 4g of baking powder twice for a finer texture. Add these dry ingredients to the wet mixture. Gently fold them in using a spatula until just combined, being careful not to overmix. This prevents a tough texture.

Step 5

Add 5g of lemon juice for a touch of brightness and 3g of salt to enhance the flavors. Gently mix again until incorporated. The lemon juice also helps to cut through any eggy taste.

Step 6

Finally, add the 20g of golden cheese powder to the batter. Mix thoroughly until the cheese powder is evenly distributed, creating a smooth batter with a rich cheese aroma.

Step 7

Prepare your madeleine molds by greasing them thoroughly with butter. This is crucial for preventing the madeleines from sticking and ensuring they release easily with a beautiful shape. You can also lightly dust with flour or breadcrumbs if desired.

Step 8

Transfer the batter to a piping bag. Fill each madeleine mold about 70-80% full. Avoid overfilling, as the batter will expand during baking and could overflow.

Step 9

Preheat your air fryer to 180°C (350°F) for 7 minutes. Once preheated, reduce the temperature to 170°C (340°F) and bake for 9 minutes. Baking times can vary depending on your air fryer model, so keep an eye on them and adjust as needed until they are golden brown. Your delicious Golden Cheese Madeleines are ready!
