Ingredients
  • 1 pack (800g) fresh ginger
  • Disposable zipper bags or airtight containers
  • Food dehydrator (optional)

Cooking Instructions

Step 1

Start by preparing one pack of fresh ginger. Rinse the ginger under cold running water, gently rubbing the clustered parts to remove any dirt. Repeat this washing process 2-3 times until the ginger is thoroughly clean. If there’s a lot of soil, a soft brush can be helpful.

Step 2

Since it’s fresh ginger, you might find remnants of the stem at the ends. Carefully trim these parts with a knife. Then, use the dull side of the knife to gently scrape off the skin. The skin should peel away easily without much force. Peeling thinly helps preserve the ginger’s natural aroma and flavor.

Step 3

After peeling all the ginger, place it on a colander to drain excess water thoroughly. Once completely dry, it’s time to slice the ginger. Aim for a consistent thickness of about 0.5 cm, which will make it convenient for later use. Slicing thinly ensures efficient drying and a tender texture.

Step 4

For half of the sliced ginger, use a food dehydrator to dry it thoroughly. Drying for about 4-5 hours will result in crisp, almost moisture-free ginger. If you don’t have a dehydrator, you can air-dry it in a well-ventilated area away from direct sunlight, or use an oven on a low setting.

Step 5

The remaining half is ready for immediate use. Place it in disposable zipper bags or airtight containers, pressing down to flatten and remove as much air as possible before sealing. Storing it this way in the freezer will help maintain its freshness for a long time. Frozen ginger is incredibly useful for making pork bossam, braising chicken, or preparing soy-braised dishes – just take out the amount you need!

Step 6

The ginger dried in the food dehydrator can be used in various ways. Brew it with pear, jujubes, or dried quince for a warming ginger tea, excellent for warding off colds during transitional seasons.
