- 600g thinly sliced pork shoulder
- 10 fresh perilla leaves
Seasoning Ingredients
- 2 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 2 Tbsp sugar
- 1 Tbsp minced garlic
- A pinch of black pepper
- 1 Tbsp sesame seeds

Cooking Instructions
Step 1
First, prepare 600g of thinly sliced pork shoulder. Place the pork in a bowl and add all the seasonings: 2 Tbsp soy sauce, 1 Tbsp oyster sauce, 2 Tbsp sugar, 1 Tbsp minced garlic, and a pinch of black pepper. Gently mix with your hands to ensure the marinade coats the meat evenly. Letting it marinate for about 10 minutes will allow the flavors to penetrate deeper.
Step 2
Next, wash the perilla leaves thoroughly. Rinse them carefully under running water, then pat them completely dry with paper towels. Leftover moisture can cause a bitter taste when stir-frying. Once dry, thinly slice the perilla leaves into strips about 0.5 cm wide. Slicing them this way will give them a pleasant texture when stir-fried with the pork.
Step 3
Heat a wide pan over medium-high heat. Add all the marinated pork and stir-fry. As the meat releases its juices and starts to cook, stir occasionally to prevent the marinade from burning. Once the pork is nearly cooked and nicely browned, taste it and adjust the seasoning by adding more soy sauce or salt if needed. Stir-frying until it’s slightly crispy adds to the deliciousness.
Step 4
When the pork is fully cooked, add the sliced perilla leaves to the pan and stir-fry quickly over high heat. Stir-fry for just about 30 to 40 seconds, until the perilla leaves are slightly wilted. Be careful not to overcook them, as this can diminish their fresh aroma and crisp texture.
Step 5
