Fluffy Potato Salad Morning Bun Sandwich
Easy Homemade Potato Salad Sandwich Recipe
Hello everyone! I was wondering what snack to make for the kids, and I decided to make a delicious sandwich using the morning buns I had at home. This soft and savory potato salad is not only great in sandwiches but also wonderful as a canapé or simply eaten with a spoon. Shall we quickly make this simple yet satisfying potato salad sandwich?
Main Ingredients
- 2 large potatoes
- 2 hard-boiled eggs
- 1/4 carrot
- 1/4 onion
- 3 Tbsp mayonnaise
- 1 Tbsp honey mustard
- Pinch of salt
Cooking Instructions
Step 1
Wash the potatoes thoroughly. Place them in a microwave-safe container with about half a soju cup of water and microwave for 15 minutes until cooked. (You can also boil them in a pot.) Boil the eggs. Finely chop the carrot and onion.
Step 2
Once the potatoes are cooked and the steam has released, peel them while they are still warm. Mash them finely using a potato masher or a fork. Mash the hard-boiled eggs as well.
Step 3
Add the chopped carrot and onion to the mashed potatoes and eggs. Add a pinch of salt for flavor.
Step 4
Add 3 tablespoons of mayonnaise and 1 tablespoon of honey mustard. You can adjust the amount of mayonnaise to your preference, and adding a little black pepper will enhance the flavor.
Step 5
Mix all the ingredients thoroughly until well combined to create a delicious potato salad. It’s also delicious eaten on its own!
Step 6
Cut the morning buns horizontally in half. Generously fill the opened buns with the potato salad to complete your delightful potato salad sandwiches. They make a perfect, nutritious snack for kids!
