Sandwich Ingredients
  • 10 fresh eggs
  • 6 slices of soft bread
  • 1 tsp granulated sugar
  • 1 tsp sake (or mirin)
  • 2 Tbsp whole grain mustard sauce
  • 2 Tbsp mayonnaise
  • A little water (for consistency)

Cooking Instructions

Step 1

First, crack 10 eggs into a bowl. Add 1 tsp of sake (or mirin), 1 tsp of granulated sugar, and a little water. Add the water gradually to avoid making the egg mixture too thin.

Step 2

Using a whisk, gently beat the eggs until the yolks and whites are well combined. Be careful not to overmix, as too much foam can affect the texture. Then, for a smoother and more uniform texture, strain the egg mixture through a fine-mesh sieve. This step helps avoid a lumpy texture and results in a silky rolled omelet.

Step 3

Pour the strained egg mixture into a lightly oiled pan heated over low heat, and cook it into a thick, Japanese-style rolled omelet. Let it cool slightly, then slice it into portions suitable for the sandwich.

Step 4

Trim the crusts from the 6 slices of bread using a knife. Removing the crusts makes the sandwich softer and easier to eat.

Step 5

On three of the bread slices, spread 2 Tbsp of whole grain mustard sauce thinly. On the other three slices, spread 2 Tbsp of mayonnaise evenly. Make sure the sauces cover the bread surface uniformly.

Step 6

Arrange the thick slices of Tamagoyaki (rolled omelet) on top of the bread slices spread with mayonnaise. Fill the bread generously with the prepared omelet slices.
