Main Ingredients
- 4 hard-boiled eggs
- 1 onion, thinly sliced
- Vegetable oil, for frying eggs
Cooking Instructions
Step 1
First, prepare 4 hard-boiled eggs. Heat a generous amount of vegetable oil in a frying pan. Roll the boiled eggs in the hot oil and fry them until the surface is golden brown and slightly crispy. Once the egg surfaces turn a delicious brown color, add 1 thinly sliced onion and stir-fry together until the onion becomes translucent. Frying the eggs will add a wonderful texture and flavor, while the softened onions will enhance the curry’s natural sweetness.
Step 2
Once the onions are well-cooked and translucent, add 1 tablespoon of chili powder and stir-fry over low heat for about 30 seconds. Lightly toasting the chili powder will bring out its spicy aroma and deepen the curry’s flavor. Be careful not to let it burn.
Step 3
Now, pour in 450ml of water. As you add the water, scrape the bottom of the pan to incorporate any delicious bits stuck to it; this will add extra depth to the flavor.
Step 4
When the water begins to boil, add 50g of curry powder. Stir continuously to dissolve the curry powder completely, ensuring there are no lumps, and let it simmer gently. Continue stirring until the curry powder is fully incorporated and the sauce is smooth.
Step 5
Continue to simmer over low heat until the curry has thickened to your desired consistency. Stir occasionally to prevent it from sticking to the bottom of the pan. Your delicious baked egg curry is ready when all the ingredients are well combined and it smells wonderful! Serve hot over steamed rice and enjoy.
