Cooking Instructions
Step 1
First, prepare the rice and vegetables that form the base of your omurice. A heaping bowl of rice is the perfect amount.
Step 2
Rinse the Vienna sausages under hot water to remove excess oil, then slice them into desired pieces. For the special sauce, combine ketchup, tonkatsu sauce, oligosaccharide, and black pepper in the specified amounts and mix well beforehand. This will make stir-frying much smoother later.
Step 3
Finely chop the vegetables and Vienna sausages to add flavor to your omurice. Dice the onion, potato, and carrot small enough for them to be tender when cooked, and finely chop the green onion.
Step 4
Heat a frying pan with a generous amount of cooking oil over low heat. Add the chopped green onion and sliced garlic, and sauté slowly until fragrant. It’s crucial to sauté without burning the garlic, just until a subtle aroma is released.
Step 5
Once the aroma of green onion and garlic is noticeable, add the diced potato, carrot, and onion, and stir-fry. When the vegetables start to become translucent, add the sliced Vienna sausages and cook them together.
Step 6
When the vegetables and sausages are sautéed, add the rice. Use a spatula to break up any clumps and ensure the rice grains are separated. Stir-fry until each grain of rice is distinct and fluffy.
Step 7
Once the rice is well-separated, add two pinches of salt and a pinch of black pepper, and stir-fry until all ingredients are evenly combined. Adjust the seasoning to your taste.
Step 8
Pour the prepared special sauce evenly over the rice. Stir-fry until the sauce is well absorbed into the rice, creating a glossy fried rice.
Step 9
Carefully pack the finished fried rice tightly into a rice bowl. This helps maintain a sturdy shape when you later cover it with the egg. Pressing out the air as you fill the bowl will result in a neater shape.
Step 10
In a separate bowl, crack two eggs. Add 1 tablespoon of milk and a pinch of salt. Whisk them well, making sure to break up the chalazae (the white stringy bits) for a smoother texture. Adding milk will make the egg mixture even softer.
Step 11
Heat a non-stick frying pan over medium-low heat. Lightly coat the entire surface of the pan with cooking oil using a paper towel. Pour the beaten egg mixture into the pan and spread it thinly and evenly to create a thin omelet. Gently swirl the pan as the egg cooks to form a uniform shape.
Step 12
Place the bowl filled with rice upside down onto the center of the cooked egg. Then, use the edges of the egg to gently wrap around the rice, forming the omurice shape. Be careful not to tear the egg as you do this.
Step 13
Now it’s time to unmold the omurice. Place a plate, slightly smaller than the frying pan, on top of the omurice and quickly invert the pan. The omurice should then sit neatly on the plate.
Step 14
Gently shape the edges of the omurice on the plate with your hands, smoothing and rounding it into a rugby ball shape. Handle it delicately to maintain its form.
Step 15
Finally, decorate the omurice by drizzling ketchup in a zigzag pattern. For an extra touch, sprinkle with parsley flakes or Parmesan cheese if desired.
Step 16
Your delicious and appetizing omurice is ready! Enjoy it while it’s warm.
