  • 1 serving of chewy udon noodles
  • 20-30g of crisp cabbage
  • 1 leek
  • 3 strips of bacon
  • 1-2 handfuls of fresh bean sprouts
  • 1 Tbsp minced garlic

Savory Seasoning Sauce

  • 1 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1/2 Tbsp oyster sauce
  • 1/2 Tbsp cooking wine (mirin or sake)
  • 1 Tbsp red pepper flakes (gochugaru)

First, blanch the udon noodles in boiling water for about 1 minute. Be careful not to overcook them, as they can become mushy when stir-fried. Chop the cabbage into thick shreds, and slice the leek diagonally. Cut the bacon into bite-sized squares. Prepping the ingredients like this makes cooking much smoother.

Wash the bean sprouts thoroughly under cold running water to remove any dirt or debris. Gently drain any excess water; this will help prevent the dish from becoming too watery when stir-fried.

Now, let’s stir-fry! Heat a generous amount of cooking oil in a pan over medium heat. Add the minced garlic first and sauté until fragrant to create garlic-infused oil. Once the garlic aroma is released, add the prepared bean sprouts, shredded cabbage, sliced leek, and bacon. Stir-fry quickly over high heat. The key is to cook until the vegetables are slightly softened and the bacon is nicely browned.

Once the vegetables and bacon are well stir-fried, add the blanched udon noodles and all the seasoning ingredients (soy sauce, sugar, oyster sauce, cooking wine, red pepper flakes). Stir-fry rapidly over high heat to ensure the sauce evenly coats the noodles and vegetables. Continue to stir-fry for another 1-2 minutes, being careful not to burn the sauce, until a delicious stir-fried udon is ready.
