Delicious Stir-Fried Eggplant Recipe
Easy and Quick! Stir-Fried Eggplant with the Flavor of Steamed Eggplant Salad
Whip up this delicious stir-fried eggplant in just one pan, no steamer needed! Instead of the usual hassle of preparing steamed eggplant salad, try this stir-fried version that’s wonderfully chewy and packed with savory flavor. It’s perfect as a side dish for rice or even as a snack. Using two fresh eggplants harvested this year, you can create a stir-fried eggplant dish that’s just as moist and tender as freshly prepared steamed eggplant salad. Plus, the simple cooking method means less washing up, making it even more appealing!
Ingredients
- 2 fresh eggplants
- 1 Tbsp cooking oil
- 2 Tbsp sesame oil
- 1/2 white part of a green onion
- 1 Tbsp minced garlic
- 1/2 cup kelp and anchovy broth
- 2 Tbsp soy sauce
- 1 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
First, thoroughly wash the 2 fresh eggplants under running water. Trim off the stems, then slice them diagonally into about 1cm thick pieces. Afterward, cut each piece in half lengthwise to prepare them into bite-sized pieces for cooking.
Step 2
Now, heat a pan over medium heat. Add 1 tablespoon of cooking oil and 2 tablespoons of sesame oil. Once the pan is warm, add 1 tablespoon of minced garlic and the thinly sliced white parts of half a green onion. Sauté for about 30 seconds until fragrant, allowing the garlic aroma to release.
Step 3
Add all the prepared eggplant pieces to the pan with the fragrant garlic and green onion. Stir-fry gently, ensuring the eggplant is evenly distributed in the pan. Continue to cook until the eggplant starts to soften slightly.
Step 4
Once the eggplant is partially cooked, pour 1/2 cup of kelp and anchovy broth along the edges of the pan. This will add moisture to the eggplant and prevent it from drying out during cooking. Stir-fry together as the broth reduces, allowing the delicious liquid to be absorbed by the eggplant.
Step 5
When the eggplant is tender and the liquid has slightly reduced, add 2 tablespoons of soy sauce to season. Mix well and stir-fry for another 1-2 minutes until a glossy sheen appears. This step will enhance the color and flavor of your delicious stir-fried eggplant.
Step 6
Finally, sprinkle 1 tablespoon of toasted sesame seeds over the dish for added nuttiness. Give it one last gentle stir to combine. Your delicious stir-fried eggplant is now ready! It’s especially wonderful served over a bowl of hot rice.
