Delicious Roasted Duck (Ori Ro-seu) Recipe for Special Occasions

Remember that unforgettable duck dish you’ve had somewhere? Here’s a recipe for a gorgeous roasted duck that you can enjoy just like at a restaurant, right in your own kitchen. The fragrant chives and rich flavor of the duck will create a special menu that your whole family will love.

Main Ingredients
  • 500g Duck meat
  • 300g Garlic chives
  • 1 Onion
  • 1 pack Ssammu (pickled radish wraps)

Duck Marinade
  • 500g Duck meat
  • 1 tsp Salt
  • 1 Tbsp Mirin (or Cheongju/Sake)
  • 1/2 tsp Ginger powder
  • 1 tsp Black pepper
  • 1 Tbsp Minced garlic

Chive Seasoning
  • 300g Garlic chives
  • 1 Tbsp Soy sauce
  • 1/2 tsp Anchovy sauce (or fish sauce)
  • 1 tsp Sugar
  • 1 tsp Vinegar
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • A little Sesame oil
  • A little Toasted sesame seeds

Cooking Instructions

Step 1

First, in a bowl, combine the 500g of duck meat with 1 Tbsp of Mirin (or Cheongju), 1 Tbsp of minced garlic, 1 tsp of salt, 1/2 tsp of ginger powder, and 1 tsp of black pepper. Mix well and let it marinate for about 30 minutes. This step helps to remove any gamey odor from the duck and enhances its flavor. (Measurement conversion: 1 Tbsp = 15ml, 1 tsp = 5ml)

Step 2

Now, let’s prepare the chive seasoning. In a small bowl, mix 1 Tbsp of soy sauce, 1/2 tsp of anchovy sauce, 1 tsp of sugar, and 1 tsp of vinegar. Stir until the sugar is dissolved. Dissolving the sugar beforehand ensures the seasoning coats the chives evenly.

Step 3

Wash the 300g of garlic chives and cut them into approximately 3cm lengths. Thinly slice half of the onion. We’ll use the other half later.

Step 4

Add the seasoning mixture you prepared in step 2 to the cut chives and sliced onion. Toss gently to combine. Then, sprinkle in 1 Tbsp of gochugaru, a little sesame oil, and toasted sesame seeds. Mix lightly. (Note: While sesame oil is sometimes omitted in dishes with vinegar, a small amount here adds a wonderful nutty aroma and flavor when stir-fried with the duck.)

Step 5

Heat a frying pan over medium-high heat. Add the marinated duck meat to the pan. You don’t need to add any cooking oil, as the duck will release plenty of its own flavorful fat as it cooks.

Step 6

Cook the duck, stirring occasionally, focusing on searing the meat. Once the duck is about halfway cooked, add the remaining half of the onion, which you’ve thinly sliced, to the pan. Stir everything together. Do not add the chives yet.

Step 7

Cooking Tip: For the best texture, it’s actually ideal to cook the duck meat thoroughly first, then add the onions and chives towards the end. While I cooked them together for the photo, adjusting the cooking times will yield superior results. Sautéing the onions and chives in the rendered duck fat will infuse them with delicious flavor.

Step 8

Once the duck is fully cooked and the onions and chives have softened slightly, your roasted duck is ready! Serve it with the ssammu (pickled radish wraps). Place a portion of the duck and the stir-fried chives and onions onto a wrap and enjoy a generous bite.

Step 9

A Note on Seasoning: This recipe is seasoned to be slightly milder, making it a great accompaniment to alcoholic beverages. If you prefer a stronger flavor, consider adjusting the seasoning as suggested in the next step.

Step 10

Alternative for Rice Banchan: If you’re not planning to serve this with ssammu and would like to make it a side dish for rice, especially for children, adjust the duck marinade by adding 2 Tbsp of soy sauce and 1 Tbsp of sugar. Also, omit the gochugaru from the chive seasoning. This will transform it into a delicious duck bulgogi! ^^
