My child asked for something ‘delicious,’ and after a moment’s thought, I decided on curry rice! While a luxurious lobster might be out of reach, a tasty curry is perfectly doable. I headed to the market to pick up some fresh pork and vegetables to create a hearty and satisfying one-bowl meal: pork curry rice. This recipe is simple yet packed with deep flavor and a variety of textures, making it a hit with the whole family. Let’s get cooking!

Main Ingredients
  • Curry Roux Blocks: 4 pieces (adjust to your preference)
  • Pork (for curry): 250g
  • Onion: 1 medium
  • Carrot: 1/2 medium
  • Zucchini: 1/2 medium
  • Potato: 1 medium
  • King Oyster Mushroom: 1
  • Water: 800ml

Cooking Instructions

Step 1

First, lightly rinse the pork cut into curry-sized pieces under cold water and pat dry with paper towels. Marinate the pork with 1 Tbsp of sake (or mirin), a pinch of salt, and a dash of coarse black pepper. Let it sit for about 10 minutes. The sake helps to remove any gamey odors and tenderizes the meat.

Step 2

Peel and wash the onion, carrot, zucchini, and potato. Dice them into approximately 1.5cm cubes. Slice the king oyster mushroom into similar-sized pieces. If your child dislikes carrots, you can chop them smaller or even grate them.

Step 3

Heat a wide pot or pan over medium heat. Add 2 Tbsp of canola oil and 2 Tbsp of perilla oil (or sesame oil). Once the oil is warm, add the marinated pork and sauté until it’s browned on all sides. The pork will release some fat, adding flavor to the dish.

Step 4

When the pork is about 80% cooked, add all the prepared vegetables (onion, carrot, zucchini, potato, and mushroom) to the pot. Stir everything together with the pork and vegetables for about 2-3 minutes, allowing them to meld and slightly soften.

Step 5

Once the ingredients are sautéed, pour in 800ml of water. Bring the mixture to a boil over high heat, then reduce the heat to medium-low once it starts bubbling.

Step 6

As the mixture simmers, add 4 blocks of curry roux. Stir continuously with a spatula to dissolve the roux completely, ensuring it doesn’t stick to the bottom of the pot. Curry roux blocks dissolve easily in hot liquid.

Step 7

Once the curry begins to thicken, let it simmer gently over low heat for another 5 minutes, allowing the flavors to fully infuse into the ingredients. The wonderful aroma of homemade curry rice will fill your kitchen. Serve generously over hot steamed rice and enjoy!
