Fried Rice Ingredients
- 2 bowls of warm cooked rice

- 1 Tbsp sesame oil

Homemade Chashu Ingredients
- 4 strips of pork belly (about 300-400g)

- 3 Tbsp cooking sake (mirin)

Cooking Instructions
Step 1
Let’s start by making delicious chashu! Pat the pork belly dry with paper towels and lightly season both sides with black pepper. Heat a little cooking oil in a pan and sear the pork belly until golden brown on both sides. Once the surface is cooked, remove it immediately.
Step 2
Now, let’s make the chashu braising liquid. In a pot, combine 5 Tbsp soy sauce, 2 Tbsp brown sugar, 3 Tbsp cooking sake, and 1 cup of water. Bring to a simmer over medium heat, stirring until the sugar is completely dissolved. Your flavorful chashu sauce is ready!
Step 3
Carefully place the seared pork belly into the simmering chashu sauce. Cover the pot and let it braise over low heat for 20-30 minutes. Flip the pork belly occasionally to ensure it absorbs the sauce evenly. This process will result in tender and delicious homemade chashu.
Step 4
While the chashu is braising, let’s prepare for the fried rice. Heat 1 Tbsp of cooking oil in a pan. Crack in the 2 fresh eggs and, as they begin to cook, quickly scramble them with chopsticks until fluffy. Once cooked, transfer the scrambled eggs to a separate plate.
Step 5
Once the chashu is well-braised, let it cool slightly, then dice it into small, bite-sized pieces for the fried rice. Now, for the fried rice! In a clean pan, heat 1 Tbsp of sesame oil and sauté the finely chopped green onion over medium-low heat until fragrant. Add the diced chashu and stir-fry together. Don’t forget to incorporate any delicious rendered fat from the chashu for extra flavor!
Step 6
When the chashu and green onions are well-fried, add 2 bowls of warm cooked rice. Use a spatula to break up any clumps of rice and mix everything thoroughly. Stir-fry until the rice and chashu are well combined, then add a pinch of black pepper for aroma.
Step 7
Finally, top the rice with the prepared scrambled eggs and drizzle with 2 Tbsp of soy sauce for added savory flavor. Give it one last quick stir-fry to combine all the ingredients. Your wonderful Chashu Fried Rice is now complete! Enjoy it while it’s warm.
