- Crisp bean sprouts
- 2 hard-boiled eggs
Special Jjolmyeon Sauce
- 9 Tbsp vinegar
- 6 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 6 Tbsp sugar
- 3 Tbsp minced garlic
- 6 Tbsp water
- Sesame oil (for flavor)
- Toasted sesame seeds (for garnish)
- 9 Tbsp vinegar
- 6 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 6 Tbsp sugar
- 3 Tbsp minced garlic
- 6 Tbsp water
- Sesame oil (for flavor)
- Toasted sesame seeds (for garnish)
Cooking Instructions
Step 1
In a pot, add just enough water to cover about one-third of the bean sprouts. Cook them with the lid off from the beginning. This method helps maintain the bean sprouts’ crisp texture.
Step 2
Once the bean sprouts are cooked, quickly drain them and rinse under cold water to stop the cooking and cool them down. This is key to keeping them crunchy.
Step 3
After rinsing, place the bean sprouts in a colander to drain any excess water thoroughly.
Step 4
To the water used for boiling the bean sprouts, add a small amount of dried shrimp and bring to a simmer. Then, slowly pour in beaten eggs, stirring gently. Season the broth with fish sauce, soy sauce, and salt to taste. Finally, add finely chopped green onions and the broth is ready. (This broth is served alongside the jjolmyeon.)
Step 5
Now, let’s make the special jjolmyeon sauce. In a wide bowl, combine 9 Tbsp vinegar, 6 Tbsp gochugaru, 2 Tbsp soy sauce, 6 Tbsp sugar, 3 Tbsp minced garlic, and 6 Tbsp water. Whisk everything together until well combined. Finish with a drizzle of sesame oil and a sprinkle of toasted sesame seeds for extra aroma and flavor.
Step 6
Arrange the cooked jjolmyeon noodles attractively in a serving bowl. Generously top with the shredded cabbage and the well-drained bean sprouts. The abundance of fresh vegetables adds wonderful texture.
Step 7
Spoon the special jjolmyeon sauce generously over the noodles and vegetables. Add the halved hard-boiled egg as a garnish. The delightful combination of sweet, sour, and spicy sauce, chewy noodles, and crisp vegetables creates a truly delicious jjolmyeon!
Step 8
The symphony of flavors dancing in your mouth is like a festival! How about hosting a fun jjolmyeon party this weekend? It’s the perfect dish for the whole family to enjoy together.
