Main Ingredients
  • 1 packet instant ramen
  • 1/4 carrot
  • 1/2 onion
  • 1/4 bell pepper
  • 1 shiitake mushroom

Sweet and Sour Sauce
  • 1 Tbsp lemon juice
  • 3 Tbsp vinegar
  • 3 Tbsp sugar
  • 2 tsp soy sauce
  • Pinch of salt
  • 1/2 cup water (using a paper cup as a measure)

For Thickening the Sauce
  • 3-4 Tbsp water
  • 1 Tbsp cornstarch

For Frying Noodles
  • 6 Tbsp cooking oil

Cooking Instructions

Step 1

First, prepare the vegetables. Wash and pat dry the 1/2 onion, 1/4 carrot, 1/4 bell pepper, and 1 shiitake mushroom. Slice them thinly to incorporate well into the sweet and sour sauce. Feel free to use other vegetables you have in your refrigerator!

Step 2

Heat 2 tablespoons of cooking oil in a frying pan or wok over medium heat. Add the carrot, which requires the longest cooking time, and stir-fry for 1-2 minutes. Then, add the onion, shiitake mushroom, and bell pepper in order, stir-frying until each vegetable is slightly translucent and fragrant. (About 1-2 minutes per vegetable)

Step 3

Pour 1 and 1/2 paper cups of water into the pan with the stir-fried vegetables. Add 3 tablespoons of sugar and 3 tablespoons of vinegar. Stir well to combine all ingredients and bring to a boil.

Step 4

Once the sauce begins to boil, reduce the heat to low. In a small bowl, mix 3-4 tablespoons of water with 1 tablespoon of cornstarch to create a slurry. Gradually add the cornstarch slurry to the sauce while stirring continuously until it reaches your desired thickness. Finally, stir in 1 tablespoon of lemon juice and 1 teaspoon of soy sauce to season. Adjust the taste with a pinch of salt if needed, then turn off the heat.

Step 5

Now it’s time to fry the ramen. Bring a pot of water to a boil and add 1 packet of ramen. Blanch the noodles for about 2 minutes. Be careful not to overcook them, as they might fall apart during frying. Drain the blanched ramen thoroughly in a colander.

Step 6

In a frying pan, heat a generous amount of cooking oil (about 4 tablespoons) over medium heat. Place the drained ramen into the hot oil, arranging it in a circular shape. Gently press down with a spoon or spatula as you fry, turning it over to achieve a golden brown and crispy texture on both sides. The goal is to make it as crispy as fried rice crust!

Step 7

Once the ramen is golden and crispy, carefully remove it from the pan and place it on a serving plate. You can cut it into bite-sized pieces if desired. Gently reheat the prepared sweet and sour sauce in a small pot until warm. Warming the sauce enhances its flavor.

Step 8

Finally, pour the warm sweet and sour sauce generously over the crispy fried ramen. Your delicious “Ramen Tangsuyuan” is now complete! The kids will surely love it too. Enjoy your meal!
