- 2 cups (400ml) soy sauce
- 1 cup (200g) sugar
- 1 cup (200ml) vinegar
- 2 cups (400ml) water
- 1/2 cup (100ml) soju or cooking wine

First, thoroughly wash the peppers under running water. Carefully inspect them and remove any bruised or spoiled ones. Next, soak the peppers in a mixture of water and a little vinegar for about 5-10 minutes to effectively remove any residual pesticides. Rinse them thoroughly with clean water multiple times afterward. To help the brine penetrate the peppers better, gently prick each pepper a few times with a toothpick.

After washing, pat the peppers dry with a paper towel or let them air dry completely. If the stems are too long, trim them to a suitable length for easier handling and better brine absorption.

Now, let’s prepare the pickling brine. In a pot, combine 2 cups of soy sauce, 1 cup of sugar, 1 cup of vinegar, 2 cups of water, and 1/2 cup of soju (or cooking wine). Bring the mixture to a rolling boil over medium heat, stirring until the sugar is completely dissolved.

Place the prepared peppers into a heat-resistant glass jar or airtight container that has been sterilized by boiling water. After pouring the hot brine, do not seal the container immediately. Allow it to cool down slightly. Once cooled, securely seal the container with a lid and refrigerate.
