Essential Ingredients
  • 75g unsalted butter, softened to room temperature
  • 150g cake flour (or all-purpose flour)
  • 20g almond flour
  • 1g salt
  • 70g powdered sugar (confectioners’ sugar)
  • 20g egg (lightly beaten, at room temperature)
  • 80g sliced almonds

Cooking Instructions

Step 1

Begin by creaming the unsalted butter (75g), which has been softened at room temperature, in a bowl. Use a hand mixer or a whisk to whip it until it reaches a smooth, creamy consistency. Ensure the butter is neither too cold nor melted.

Step 2

Once the butter is creamy, add the sifted powdered sugar (70g) and salt (1g). Mix gently until just combined. Be careful not to overmix at this stage, as it can lead to tough cookies.

Step 3

Gradually add the lightly beaten egg (20g) in two additions, mixing well after each addition. This helps to ensure the mixture emulsifies properly. Mix gently after adding the second portion of egg until just incorporated.

Step 4

Sift the cake flour (150g) and almond flour (20g) directly into the butter mixture. Using a spatula, gently fold the flours into the wet ingredients until no dry streaks remain. Avoid overmixing to prevent developing gluten, which can make the cookies chewy.

Step 5

Once the flour is mostly incorporated, add the sliced almonds (80g) and gently mix until they are evenly distributed throughout the dough. The dough should start to come together.

Step 6

Gather the dough into a cohesive ball. Transfer it to a clean work surface and gently shape it into a log or cylinder. Aim for a uniform thickness.

Step 7

Wrap the shaped dough tightly in plastic wrap and refrigerate for 1 to 2 hours, or until firm. This chilling step makes the dough easier to slice and helps the cookies maintain their shape during baking.
