Ingredients

  • Flounder sashimi, 2/3 cup (approx. 100g)
  • Tempura flour, 1 and 1/2 cups (approx. 150g)
  • Water, 1 cup (approx. 200ml)
  • Vegetable oil, for frying
  • Tartar sauce, 3 tablespoons
  • Panko breadcrumbs, 1 cup (approx. 100g)

Optional Salad

  • Baby greens, 1 cup (approx. 50g)
  • Yuzu jam, 1 tablespoon

Cooking Instructions

Prepare the flounder sashimi. Ensure it’s fresh and cut into bite-sized pieces, about 0.5cm thick.

Lightly coat each piece of flounder sashimi with tempura flour. For an even coating, you can place the fish and tempura flour in a resealable bag and gently shake. This flour layer helps the batter adhere better.

In a bowl, combine the tempura flour and water to create a batter. Mix gently until just combined; a few lumps are okay, as overmixing can make the batter tough. Dip the flour-coated flounder pieces into the batter, ensuring they are lightly coated.

Place panko breadcrumbs in a shallow dish. Take the battered flounder pieces and press them into the panko, coating both sides thoroughly. This step is crucial for achieving that signature crispiness.

Heat vegetable oil in a frying pan to about 170°C (338°F). Carefully place the panko-coated flounder into the hot oil. Fry for about 2-3 minutes, until lightly golden brown. Remove the pieces and drain on paper towels. Reheat the oil to 180°C (356°F) and fry the pieces again for another 30 seconds to 1 minute. The double-frying technique ensures a wonderfully crisp exterior and moist interior. Be careful not to overcook, as the panko can burn quickly.
