Cooking Instructions
Step 1
First, prepare all the ingredients for the dish. Thinly slice the onion and finely chop the green onion. Prepare your shrimp tempura and sweet potato cheese stick by either frying them or heating them in an air fryer until warm. (Tip: Using freshly fried tempura will give you the crispiest result.)
Step 2
In a small pan or pot, combine the soy sauce, mirin, sugar, and water. Stir well to dissolve the sugar and bring the mixture to a simmer over medium heat. Once boiling, add the thinly sliced onions and cook for about 2-3 minutes over medium heat until the onions become slightly translucent.
Step 3
Pour in the beaten eggs and add the chopped green onions. Reduce the heat to low. Cook until the eggs are about 75-85% set. (Tip: Adjust the cooking time for the eggs based on your preference. Cooking them slightly less, like a soft scramble, will result in a more tender and moist texture. Overcooking can make them dry.)
Step 4
Place the warm rice into a serving bowl. Spoon the sauce with onions and eggs generously over the rice. Arrange the crispy shrimp tempura and sweet potato cheese stick on top.
Step 5
Finally, add tartar sauce to your liking and sprinkle with parsley flakes for a beautiful finish. Your delicious Ebiden (Shrimp Tempura Donburi) is now complete! Serve immediately while warm for the best taste.
